I am an avid fan of fish and seafood and serve it as often as I can. In themselves they are packed with so much flavour that there is not much needed to be done to them. Once in a while though, we hanker for something new, some shift to our usual menu.

PORK AND CHORIZO EMPANADA


I am so sorry for not having posted in a while. I have been in the Philippines for the past month to visit my ailing father who passed away peacefully on May 12. Despite my love and loyalty to my blog, I had to deal with this event without any distraction from anything else. I thank the Lord for giving me, my siblings ( three of us had to fly from different parts of the globe), my daughter and my niece a few but immensely happy days bonding for the last time with Tatay (father). A lot of friends and family members were with us throughout it all, and we are all extremely thankful.

AVOCADO AND PISTACHIO PRALINE GELATO



My husband loves avocados but the only way he knows how to eat it is in salads. When we first met he only had it with prawn cocktail.

Avocado grows in abundance in the Philippines. I just love it but the only way I know how to eat it is in sweets. The most common way to eat is is scraped into noodle shapes with a special tool, then mixed with milk, sugar and ice. When I made this for my husband for the first time, he was very pleasantly surprised at how good it tasted made that way. He couldn't imagine it being eaten sweet. He was converted from the first spoonful. It was love at first taste.
