This dish is my version of a very popular rice dish in the Philippines called Java rice. It is in no way connected to the place Java. It was popularized by a restaurant called Aristocrat which is known for their barbecue chicken. 

A lot of people have fond memories of family meals in that  restaurant. Although they have a lot of excellent dishes, most people don't bother to read the menu because they know what they came for: barbecue chicken. Bone-in chicken portions threaded on bamboo skewers are served with this rice and and green papaya pickles. 

This rice goes so well with any barbecue dish. I have added salami to this one but you can add any meat (ham, bacon, cooked minced pork) you like or none at all. 


2 tbsps. olive oil
4 cups of cooked rice
2 cloves of garlic, crushed
1 medium red or white onion , chopped
1/4 cup of cooked bacon, ham or salami or any cooked meat you like
1 tbsp. tomato puree (tomato paste)
1 tbsp. paprika
1 tbsp. light soy sauce or 2 tsps. salt


Sauté  the garlic in the olive oil until golden brown.

Add in the onions and cook until softened. 

Add the tomato puree, meat and paprika and stir until blended. 

Add the rice and fry, stirring to mix evenly with the seasonings, for 5 minutes.

Serve with barbecued meat.

  6. Nami, there are lots of food names like that in the Philippines. I guess they just coin names that evoke certain flavours, tastes or style of cooking.

  10. This rice sounds very tasty and delicious! It is a little like the tomato rice (minus the meat) found in Malaysia.
