FLOURLESS PEANUT BUTTER COOKIES



I do not bake cookies a lot. I probably like savoury snacks more than sweet ones. This one, though, is one that I really like, and if I am in the mood to bake cookies, this is most often the one I make.

I love peanut butter and these cookies are mostly peanut butter with the other ingredients just there to bind and form it into cookies. What's more, there are only four ingredients, 2 measures of each. Read it once and you'll memorize it instantly. Mix, shape and bake. Isn't it great?


The recipe comes from Woman's Day but I omitted some of the ingredients: the chopped peanuts and the chocolate ganache. I just wanted simple lumps of peanut butter and nothing else to distract my enjoyment.



Ingredients:

2 c. smooth peanut butter
2 c. light brown sugar
2 large eggs
2 tsps. baking soda

Method:

Pre-heat the oven to 350° F/ 180° C.

Beat all of the ingredients with an electric mixer until smooth and blended. (The light brown sugar may be replaced with 1 cup each of white and brown sugar.)

Drop level tablespoonfuls, 2" apart, onto ungreased baking sheets. Press gently with a fork.

Bake, one sheet at a time, until puffed and golden, for about 10 minutes. It will still be slightly soft when cooked but will firm up after cooling. Leave in the pan for 5 minutes before transferring to cooling racks.

    I hardly make cookies too; only during CNY because it took me and my family very long time to finish the cookies :-) Since it is Halloween coming it is good to bake some to give away to the children.

    1. I love CNY cookies! Love seeing them in the shops in their red and gold packaging. These won't be out of place on CNY. Easier to make than peanut cookies.

    2. I can't wait to give these a try. I have one that has only three ingredients in it, but they are a bit fussy. Guess its due to the humidity, cuz they don't always come out the way they should. Your recipe looks like a keeper to me...thanks a million.

  3. No flour and no butter! I love it! I'm not a baker either, so I didn't know it was possible to even make cookies without flour and butter. Now I know! These are perfect and I do love peanut butter cookies!
