TROPICAL FRUIT COCKTAIL


Being in the tropics, the weather is usually hot in the Philippines. There are only two seasons: wet and dry and the divide between them is blurred. It is predominantly hot, sometimes very very hot, then wet when typhoons and monsoon rains come.

So how do we know when it's summer? It is summer when school finishes. It is summer when there is a town fiesta every week. It is summer when all our favourite fruits are in season. It is summer when there are a lot of insects wanting to feast on the fruits.


I remember that there's always cut up fruits in the fridge ready for anyone who wants a cooling snack. The problem is that everyone wants to have some every few minutes. Opening the fridge door every so often in hot weather is a very bad idea. 

Although summers here in London are not as hot, we still enjoy a wide variety of fruits. Each one of them, no matter what kind, is bursting with flavour. I can't decide which one to eat first so why not have them in one go. This light tropical fruit cocktail is refreshing and delicious, just perfect as a barbecue party dessert.



Ingredients:

340 gm. tin of pineapple pieces or chunks
175 gm. tin of mandarin orange segments
600 gms. of cubed watermelon (about a quarter of medium sized one), seeds removed
1/2 of a galia or cantaloupe melon
3 honey mangoes, cubed
3 bananas cut into chunks
juice of 2 navel oranges
6 tbsps.-1/2 c. of sugar

Choose perfectly ripe (not over ripe) fruits for this recipe. The amount and assortment of fruits may be varied.

Drain the tinned fruits but save the juice or syrup. Mix the fruits together in a bowl.  Mix the orange juice with the fruit juice/syrup and add sugar to taste and stir until the sugar is dissolved. The amount of sugar will depend on the sweetness of your fruits. Mix with the fruits. Chill before serving.

This quantity will make 8-12 servings.
